Power Salad with Sweet Balsamic Dressing

  • 12 cups mixed field greens
  • 1 cup summer zucchini, shaved
  • 1 cup dried cranberries
  • 1 cup almonds
  • 1 cup feta cheese, crumbled

Dressing:

  • 1/2 cup extra virgin olive oil
  • 3 tsp balsamic vinegar
  • 2 tsp agave nectar

In a large bowl, combine greens with zucchini, cranberries, almonds and cheese. In a small bowl, whisk together oil, vinegar and agave nectar. Pour dressing over salad and toss until coated.
